EASY, CHEESY, SCRAMBLED VEGAN EGG

Allow me to introduce you to the magic of JUST Egg. I wish someone had done the same for me when it first came available!

It was only by chance that I tasted it on the morning following the Mercy For Animals 20th anniversary gala. Staff members from around the country and Brazil had traveled to Los Angeles to attend the event. Still recovering from the night’s festivities, several of us gathered in the dining room of an eclectic Airbnb. We awaited the arrival of the rest of the development team. (Brunch was planned at local vegan eatery Real Food Daily.) And that’s when Dani walked in from the kitchen carrying a plate of fluffy, scrambled JUST Egg

All it took was one bite to get me hooked. I tried to keep my composure as I savored the small sample, but inside I was doing the happy dance. Before going vegan, I used to eat up to six eggs at a time (usually sunny-side up). And it didn’t matter if it was breakfast, lunch, or dinner. To say I loved eggs would be an understatement.

JUST Egg

When cooked right (I totally f’ed up on my first attempt), with a complimentary ingredient or two to make my JUST Egg extra fun, I’m right back to enjoying one of my all-time favorite foods—made from plants, not chickens. That’s the beauty of being vegan in 2019—anything and everything you crave can be created without a single animal exploited in the process.

So what’s the secret? Mung bean and turmeric—simple and delicious! The mung bean gels and cooks like egg, while turmeric gives it a natural golden color. Unlike chicken eggs, JUST Egg is cholesterol-free. JUST Egg is also a great source of protein, with five grams per serving. Not sure if I’ve ever stuck to a typical serving though. In the easy peasy recipe below, each serving will give you 10 grams of the essential building block. (I ate both!)

Recipe: Serves 2

Ingredients

  • Earth Balance Vegan Buttery Stick
  • 6 fl oz JUST Egg
  • 1 TBSP Follow Your Heart Dairy-Free Shreds
  • Pepper

Instructions

  1. Place pan over low-medium heat. Using the end of an Earth Balance Vegan Buttery Stick, lightly coat pan.
  2. Shake JUST Egg well and pour approximately half of bottle (6 fl oz) into pan.
  3. Stir, flip, and scramble Just Egg until near desired consistency.
  4. Add Follow Your Heart Dairy-Free Shreds and stir gently until cheese has melted. I recommend their fiesta blend or cheddar, but it’s also available in mozzarella and a pizzeria blend (mozzarella and parmesan).
  5. Pepper to taste.
  6. Enjoy!

Notes

Treat yourself! Serve with everyone’s favorite brunch fruits and veggies, like avocado, spinach, tomato, or fresh cantaloupe.

You can also never go wrong with buttery toast, hash browns, or Beyond Breakfast Sausage Classic Patties.
