Life Update: I finally tried JUST Egg Folded! It’s a f*cking game changer. Each box has four individually wrapped, delicious, stackable, almost-ready-to-eat, folded plant-based eggs. There are a few ways to prep it—the instructions recommend popping it in the toaster—but I’ve opted for the stovetop.

I drizzle a bit of olive oil in a pan and, on low-medium heat, warm one side for about three minutes. Then I flip it, drop a slice of vegan cheddar on top, and let it heat a few more minutes. Voila! The perfect addition to your breakfast sandwich! I’ve been enjoying one almost every day this week: JUST Egg Folded, Violife cheddar cheese, and sliced tomato nestled between a toasted English muffin smothered in Earth Balance Buttery Spread, Follow Your Heart mayo, and kale and spinach pesto (from my local farmers’ market).
