French toast with maple syrup and powdered sugar

VIVE LA FRENCH TOAST: STARRING JUST EGG AND TRADER JOE’S VEGAN BRIOCHE LOAF

When I first saw Trader Joe’s Vegan Brioche Loaf pop up in my Instagram feed, two thoughts came to mind: 1. Mmmm… I need to get some, stat. 2. Why, that will make some fine French toast!

Ok, naturally my inner self would use neither ‘stat’ nor ‘fine’ in those contexts, but she said something close.

 
Before a first attempt at making pain perdu, I ate at least two loaves straight outta the bag, like the delicious snack that it is. In three words, this dairy-free, buttery bread is LUXURIOUS and OBSESSION-WORTHY. And I just knew that, along with JUST Egg, one of my favorite childhood meals was about to be magnificently resurrected and revamped.

SWEET, SWEET MAGIC WITH ONLY 8 INGREDIENTS

At the start of this Deliciously Kind journey, I imagined I’d be a brilliant vegan chef by now. But alas! I have yet to graduate from “prepping” to actually “cooking.”

Like, I can make a wicked good breakfast sandwich—except nothing in it is made from scratch. Instead, I’ve mastered what you might call brand selection: the best plant-based breakfast sausage (Beyond Classic Breakfast Sausage) + the greatest egg substitute (JUST Egg Folded) + the finest sliced cheese (Field Roast Creamy Original Chao Slices) + other players I might divulge later.

Anyway, this French toast recipe is just my type… EASY. It’s super quick and only uses eight ingredients.

DIP, FLIP, SIZZLE

Seriously, seriously. Easy. All you gotta do is dip, flip, and sizzle those fluffy bread slices and you’re ready to drizzle, powder, and eat! French toast stack with first bite missing

RECIPE: SERVES 2

INGREDIENTS

  • ⅓ cup JUST Egg
  • ¼ cup plant milk
  • ½ tsp cinnamon
  • ½ tsp vanilla
  • 4 slices Trader Joe’s Vegan Brioche Loaf
  • Earth Balance Vegan Buttery Sticks (less than 1)
  • Organic maple syrup (for drizzling to your heart’s delight)
  • Organic powdered sugar (just enough to make you happy)

INSTRUCTIONS

  1. Begin warming a pan over medium heat.
  2. In a dish just wide enough to rest a slice of bread, whisk the JUST Egg, plant milk, cinnamon, and vanilla.
  3. Melt a little Earth Balance on the pan.
  4. Dip a slice of the brioche loaf in your expertly whisked batter, flip it to coat the other side, and begin sizzling over the butter.
  5. Once the first side has reached a golden brown, add a bit more butter to your pan to toast the other side.
  6. Voilà! Time to top with maple syrup and powdered sugar.

Because I was solo, I ate all four slices when testing this recipe. 😄 But two would be just right for a single serving.
